Beetroot & Cheddar Toasties

What you'll need:

  • 2 slices wholemeal or granary bread
  • 2 - 3 beetroot in mild malt vinegar, sliced fairly thinly
  • Freshly ground black pepper
  • 50g cheddar cheese, grated or thinly sliced

What to do:

1 Preheat the grill and lightly toast the bread on both sides.

 

2 Arrange the beetroot slices on the toast, season with pepper and top with a generous layer of cheese.

 

3 Cook under the grill until the cheese is golden and bubbling.
