Pitta Pockets with Beetroot & Smoked Salmon

What you'll need:

  • 2 pitta breads, sliced to make pockets
  • 2-3 fresh cooked beetroot in mild malt vinegar, diced
  • 100g smoked salmon, cut into strips
  • 100g cream cheese
  • Freshly ground black pepper
  • 1 pack watercress

What to do:

1 Mix the beetroot, smoked salmon and cream cheese together and season with the pepper to taste.

 

2 Put a handful of watercress in each pitta pocket and top with the beetroot and salmon mix.
