Pitta Pockets with Beetroot & Smoked Salmon

What you'll need:
- 2 pitta breads, sliced to make pockets
- 2-3 fresh cooked beetroot in mild malt vinegar, diced
- 100g smoked salmon, cut into strips
- 100g cream cheese
- Freshly ground black pepper
- 1 pack watercress
What to do:
1 Mix the beetroot, smoked salmon and cream cheese together and season with the pepper to taste.
2 Put a handful of watercress in each pitta pocket and top with the beetroot and salmon mix.
