It’s almost shameful how good dinner can be when it’s just a case of opening a couple of packets. I wouldn’t have guessed it myself, had it not been for the fact that I had some people over for supper and had to rustle up a vegetarian option at the last minute. Halloumi, otherwise know in my house as “squeaky cheese” is a fantastic standby: I think of it as vegetarian bacon...Beetroot I am more wary about, but I happened to have a vacuum-sealed pack of small and steamed beetroot, left as is and not poisoned with vinegar, and suddenly felt compelled to mix the intense saltiness of the former with the sometimes overwhelming sweetness of the latter. It didn’t just work, it really worked.
